Mold is probably the biggest concern here - and it's not cheap to get rid of.

Yeah pretty much.
Also need to very carefully consider insurance/legal liabilities.
They may have renter's insurance to cover their belongings, but your girlfriend pays the insurance on the actual house structure. Insurance companies often call it a "fire policy" even though it covers more than just fire- but it's to signify that it's different from a full homeowner's policy that cover's your belongings too. The insurance company may have its own rules and stipulations about when they will and will not cover damage to the house. And now that your girlfriend knows about the situation, if she does nothing the insurance company may not do a damn thing if something further happens to the house.
There may also be rules about running a business out of your home that they are breaking (cities/municipalities sometimes regulate that).
And then there may be some kind of legality involving complicity. Might not be against state law to grow medical marijuana but it sure as hell is still against federal law. She could get in some serious serious trouble if she does nothing now that she knows about it.
Have her blame her insurance company, her lawyer, whoever, but tell them they need to skedaddle- 30 or 60 day notice, whatever the landlord/tenant law says.

I'd count on insurance companies having something about using the premises for illegal activities absolving them from everything.

A couple of you have mentioned mold issues. Is there something specific to growing marijuana that would cause that? Just having houseplants wouldn't, no matter how many you have. My uncle is also a huge hydroponics hobbyist, grows tomatoes and cucumbers and even pumpkins hydroponically, and no mold issues.

I would evict them if it's a nice house. If it's already trashed and they can't do any real damage, let them stay.
Growing pot seems like the kind of thing you run past your landlord, like a dog or putting in a pool. And I can't believe 30 plants is legal! That seems like a lot of dope. And as someone else already pointed out, they probably got robbed because they are selling it and were targeted by one of their customers. It will most likely be a continuing problem.

There's typically a lot of humidity with growing that many pot plants. It's rarely confined to the grow room and the mold grows everywhere.
To fix it you end up gutting the house. I don't care how nice your tenants are, it can't possibly be worth it at that point.

This.
If not accounted for and dealt with it could really mess up the house. We are talking a serious financial impact here. Mold can be very invasive and it will be costly to to repair the house up to code standards. If it was me, i would make them move the grow outside into a green house or kick them out. The house is also a magnet for drug thieves now.
