He eats liver pate on pumpernickel (well, it's the Danish rye bread rugbrød but it's about the same color as pumpernickel) with a slice of cucumber and a slice of a red snack pepper on top.

I also like to take liverwurst, heat it in the microwave with equal amount of cream cheese, mix it up with some diced onions, diced pickles, and a splot of mustard....then eat it on Ritz crackers. 
That sounds dangerously delicious.
Try liverwurst, fresh diced white onion, limburger cheese, on a hard water cracker or matzo... spicy brown mustard or not as you prefer.

Sounds tasty.
I've mostly replaced liverwurst with some mushroom pate stuff I buy at this hippy grocery store. It's damn good (not as good as liverwurst, but close).
I like to spread some of it on a Neva Betta cracker, crumble on some Stilton, top with a smoked oyster, then add a dash of horseradish. It's also good with smoked trout instead of the oyster. I'll make up 10 or 12 of those, grab a container of kimchi and a fork, and settle down to fall asleep in my recliner....covered in crumbs but very happy.  |

You can sleep with kimchi (even the remnants thereof) anywhere near you? My dad likes kimchi, but it's one of the worse smelling things I've ever smelt. We had a Korean guy who lived with us, and he made some of his own, and it's just rank, IMO.

Yeah, you like that Stilton. I'm not a fan... but I do love smoked oysters! I will just sit and eat them on saltines lol!
I think we must sound like a couple of impossibly old dudes because I am now realizing that my grandfather used to eat snacks like the ones we're describing. One significant difference though is that my grandfather used to love what we all called "depression food". Pickled pig's feet, ham hocks, lamb shanks, just nasty siht.
