The hole is 3 blocks deep, signs around the top edge prevent the water from flowing down but allow eggs to drop down for collection.
If you happen to chop some chickens from below, their drops are delivered as well.

Hah, yeah had that experience the first time around too. Now I do big pens with a handful of one critter. Breed until I have a mob then slaughter all but 4-6 for harvest and leave 4-6 of them in there.

And the water in 4 corners moves all the eggs they drop near the edges to the hole?
