Aside from DK's that start at 55 the fastest classes to level 80 would be Tank or Heal class running instances via the dungeon finder.
I dunno...I've tried this route and didn't have much success. I have found that I actually leveled faster doing quests than running dungeons. I also found that it became mind-numbing to do this once I hit 40 because there's a space there where there aren't many dungeons to choose from.

Fastest = hunter (assuming you can't make a deathknight). Ease = hunter hands down. Spec beast mastery and sleep while your pet kills everything. That said, they are ALL easy to level with now. Pick what you enjoy.

Prot Pally. You can insta Q random dunjuns as tank and they also solo quest very well. They have added quite a bit of DPS to the Prot spec. I can top DPS charts in Heroics as Prot tho I still get the occasional (why is a tank DPSin?) in groups. Pretty much never die or even run into trouble soloing and can solo the elite mobs for the group quests you have. Best part with pally is when all is said and done you can decide if you want to heal, dps or tank if you go the raid route.

Tank and healer are archetypes not classes.

I took 3 DK's to 80, and deleted them all because the class is garbage. It isn't our fault you enjoy a boring faceroll class that takes no skill.

Once Mages get Arcane Barrage they get down right brutal. One shotting mobs all over the place.

I loved leveling my 2 DKs. It's very handy having Death Grip up every pull thanks to glyph of death grip (now it's the talent Unholy Command). I always thought it sucky there isn't an equivalent for Warrior Charge.
BM hunter if you are starting from 1 for speed and very low reliance on gear.
