My enjoyment of things being slightly saltier is just as valid as your preference that it be less salty than I like it.
Edit: I even salt things prior to tasting if I know I enjoy it with salt and that it doesn't traditionally contain much. Examples: Pizza, Mac + Cheese, stuffing, spaghetti
I think you are missing what we are saying...
if my mashed taters need salt, I will know that after I try them, not before...

No, I get that.
I've also eaten enough pizza to know that it is always made with less salt than I like, because that is the preference of most people that eat it. If I want to salt it before tasting it, I am going to.

If I season anything after cooking, it will be with pepper. Not a huge salter.

I've been on a pepper kick for awhile now. I add pepper to my veggies and soups.

If I was only cooking for myself, I wouldn't.
That said, I use way more salt and pepper than anyone else in my family, so I tend to cook to their taste and then add more to my own plate.

Pepper, although my doctor has told me to add some salt to my diet. I was dangerously low on sodium according to my last work-up.
