Recipe:
-3 medium sweet potatoes cut into strips
-1 tbsp canola oil
-1 tbsp chili powder
1/2 tsp cayenne pepper
1/4 tsp sea salt

PH oven to 425.
In mixing bowl combine all ingredients and mix till coated.
Spread fries in single layer on rimmed baking sheet. Bake 25-30 mins until crispy on 1 side.
Turn fries over and cook for another 25-30 minutes or until golden brown.

The spices really make these good but having them not so cooked internally takes away from them.
I think I'll cut them next time she tries them. I'm thinking the thickness was the problem but maybe someone else has tried making sweet potato fries and can give hints



Lower the temp to 350 and let them bake until they're cooked through, then bump it to 425. Use a fork to decide when they're cooked at 350.

^What Term said. At the higher temp, the outside gets done too quickly (as you've noticed).

soak them overnight in vinegar, salt, creole seasoning

drain them
put them in some ranch dressing
roll in flour
deep fry

Tonight is home made chicken and noodles tho.

If you have a convection oven, your directions would probably work just fine.

I've never heard of double-frying. What exactly is the process? Or was it already described above and I missed it?

Basically you fry the potatoes once and pull them out and drain them. Then just before you serve them you dip them back into the fryer for a quick once over.

fry them until they are becoming rubbery


place on a cooling rack (which also drains the oil)


after cooled place back into the oil, and they brown up and get crispy pretty quick
