They are sooo much better. I use canola oil. Were not greasy either.
Next time I'm gonna ranch season em.
Last night made a mixture of salt, pepper, tony's, garlic, paprika, and onion. Then sprinkled that on right after taking them out of the oil.

I very rarely make them anymore, hell I very rarely eat potatoes anymore but when I do fry them, I double fry them. They turn out crispier that way.

I personally don't think they are better fried. I don't like fried foods.
I coat mine in a little canola oil and season them however I like (minimum s&p) and then bake until they're done.
What's Tony's? You have it listed in hte seasoning mixture.

Oh yeah, I oven fry, broast too. I like to make my seasoned potato cubes like that. Then melt cojack on top.
(still using oil)
sometimes ya just want a really good french fry

Tony Chachere's I assume. It's a pretty decent creole seasoning. <--- Ninja'd FTL!
As much as I try to avoid deep-fried foods the only other way I'd make homemade fries would be in a fancy combination oven which I do not have at home QQ
I'm a double-fryer myself, the first batch in a little cooler oil and the second time in about 375 degree oil.
However you fry SEASON IMMEDIATELY AFTER REMOVING FROM FRYER and toss for best flavor results, then let cool.

I don't fry often, but my husband was wanting some home made french fries. Now I hope I don't make them too often, lol.
Some of our son's friends were over too. Don't think some of them had ever had a home made fry.

You need to fry potatoes they because raw potatoes don't cook completely if you fry them at 375, they get done too quick.
Fry them first at about 310 until they're cooked through and then fry them at 375 to get them crispy.
The frozen fries you buy in a store have already had the first step done.

Is there any way to bake raw potatoes to have them come out like fried? My wife likes sweet potato fries (some healthy recipe she found) and we're having trouble baking them and having the insides done. Of course the last batch she made I think they were too thick.
Recipe:
-3 medium sweet potatoes cut into strips
-1 tbsp canola oil
-1 tbsp chili powder
1/2 tsp cayenne pepper
1/4 tsp sea salt
PH oven to 425.
In mixing bowl combine all ingredients and mix till coated.
Spread fries in single layer on rimmed baking sheet. Bake 25-30 mins until crispy on 1 side.
Turn fries over and cook for another 25-30 minutes or until golden brown.
The spices really make these good but having them not so cooked internally takes away from them.
I think I'll cut them next time she tries them. I'm thinking the thickness was the problem but maybe someone else has tried making sweet potato fries and can give hints
