This only happens with large scale cash crops adjacent to meat farms, the run off from the meat farm gets into the crop and absorbed by the crop, if there is e-coli in it it gets into the produce.
Eat organically grown crops from small producers, locally grown if possible and you will almost never have this problem.
But you knew this of course..

I will just sear the shit out of them in an iron skillet then oven finish them to a little under 160. That's a lot more well than I like fillets, but it was the only pack of them we got in our grass fed beef share and I really hate to waste them.

Small producer? Locally grown? Who gives a fark? ANY food product can be contaminated - if you want to claim otherwise you're as lethally stupid as those morons over at Odwalla Juice.
You know... A small producer that buys from small producers and is all touchy-feely organic even going so far as to not pasteurize their product like the Big  Evil  Corporate Juice Mills? THAT Odwalla Juice?
Oddly enough after 66 sick and one dead they now pasteurize their product.

I've done the same thing from time to time. I don't worry about it unless it's getting beyond 24 hours or they're unwrapped. I mostly cook chicken or ground turkey, though, so if there's pink in the middle I'm doing it wrong.

You guys sure are touchy about your food.
It's steak, you can let it sit out at room temp for a day or even longer and it can be just fine. Just wash it and trim off any parts that look shiny or dried out. The meat will actually taste better than the same cut taken directly from the fridge to the stove. I like to leave steaks out for a good 3 or 4 hours before I cook them and usually do.
I'm no advocating leaving steak sitting out all day, but it's not that big of a deal if it happens.
