This.

Professional food service rules would tell you to throw it away. Of course professional food services are working on a scale of paranoia and insurance driven fervor that you aren't.

It will be fine. I might cook it to medium and not medium rare, but other than that, you're fine I'm sure.

I hate it when I do that. I'm weird about food and (potential) bacteria. If I do that, I always throw them away.

I am the same way. A couple of dollars isn't worth my health for a night.

This morning they were completely defrosted and just slightly cooler than room temperature. Can I still use them?

You'll need to cook it a little longer than you normally would but that's about all.

This is one of the many reasons why I adore being vegetarian, never have to worry about that, cross contamination etc..

Don't risk fish or chicken. Pork and beef are more sturdy meats and take less to break down.
Its a convenient time to analyze your marriage, are you happy, and do you have insurance on your wife.

I don't think it's because of the meat breaking down. It is because there are always bacteria in the meat like salmonella in small amounts and perhaps e-coli, not enough to hurt you but it's there and when the food is warm the bacteria start to propagate very quickly to numbers that can be deadly..

It's cold where you live, right?

Or do you turn on your heater to 80 degrees like a pussy?

Either way you'll be fine.

This... and... the bacteria excrete waste byproducts which are toxic.

So when the next spinach farm or juice maker gets shut down due to an outbreak of E.Coli you'll bury your head in the sand and pretend it didn't happen? Right?
