China is the big mystery factor in this. They get a large chunk of their oil from Iran. They are also pretty anal about imposing sanctions.
Most likely it will all go the same way diplomatically, even if reluctant. But there is a small chance that this gets handled the wrong way and escalates with China siding diplomatically with Iran. Doubtful however.

It depends on what I'm cooking. Olive oil is almost a must for many Mediterranean dishes. I think canola oil is better for higher temperatures though.
