i would visit as many haunted areas as i could find, eat as much food and drink as much wine as every area had.
that is my dream life. to go around the world visiting all the haunted castles, and anything else and also make it a wine and food tour.
Hate to break it to ya but Europe doesn't look like you've seen in the "hammer horror" type of flicks. 
Sure you can find plenty of old castles though if you're prepared to travel around, then let your imagination run wild.
Btw I second Austria and personally I like Spain, Sierra Nevada area!
Oh and Crete is lovely but ofc more tourist oriented in some parts, it's large though and well worth a week on its own imo.

Rent a car. (Make sure they allow you to cross borders.)
Don't plan too much. Fun things happen where you don't expect them.
Travel from youth hostel to youth hostel. Good price and decent quality.
Doesn't really matter where you go. Just don't spend too much time in the usual tourist places, they're overrated.
This is Europe, it's awesome everywhere.
