They run at 5600, not 7200. So you will experience a bit more lag time in loading, especially if you're only putting Windows on the SSD.
They usually are 5600.

They must have changed them then.
I've got some of the 500g ones around in machines, and they're only 5600.

7200 rpm 64 mb. I specifically chose the Green over the Black because reviews say it's much quieter.

i wouldn't buy 2 560's ...especially the 2 you have selected
if you are going to buy 560's go with the 560 TI's or the 448 core 560's
but if you are going to spend $400+ on video cards...it's better to just get 1 good card and avoid SLI
a 570 will be overall cheaper and will outperform 2 normal 560's in sli
a 560 448 core will be even cheaper and depending on the brand are equal or better than a 570
for $500 you can buy a 580 which will be better than 2 560 ti's
for clarification there are 3 different 560 gtx cards
here they are from low end to high end
560 gtx <---you have these selected
560 ti <---$25 more expensive but much better
560 ti 448 core <---a month old and equal or better than stock 570's and about $80 more expensive

650w isn't enough to run that video card x2 under stress IMO. I'm sure it WILL run it, but do you want to risk it every time you're stressing the computer?
another thing, make sure you've got enough 12v rails on it...
I didn't look at the case much (other than to think it is ugly...but that's your choice, not mine)...but you might want to look into getting one that has a door on either side. Mine opens up on each side, so I was able to install the mobo and all the parts outside of the case, and just stick the door back on and lock it in. makes cleaning it easier too (look for metal handles or sturdy ones anyways...mine messed up and the handle popped off, so I have to use a screwdriver to open than side up in place of the handle lol).
Don't cheap out on the power supply. Someday you will upgrade those video cards and blow it up, this has happened to me. I got a 1200w supply to run one gtx590 (btw that card sucks).

You'll be better served getting one big ass video card than two, less awesome cards in SLI. Much better bang for the buck. SLI doesn't double performance, it essentially gives an additional 20-25%.
In 3 or 4 years when your video card is no longer cutting it then you can add another one in SLI for crazy cheap as it'll be 4 year old hardware.
I agree with the statements that your power supply is potentially under powered.
