I am a big Satch fan and it would be impossible to pick a single song, but for giggles I'll throw out this one.

I pick that one because it is his tribute to his wife. After hearing it I always wondered what this woman looked like because the melody is beautiful so can only imagine what he sees when he looks at her.
I'll also echo Sultans of Swing, Mark Knopfler is a genius and that song is one of my all time favorites.
Of course, we have to consider this solo as well

Steve Howe's solo in Queen's "Innuendo" is a favorite. Likewise the solo about 45 seconds into Yes's own "Soft As A Dove."
Just about anything on Clapton: Unplugged.
This isn't really a solo, but Martin Barre trades licks with David Pegg on bass and Ian Anderson on harmonica in this: http://www.youtube.com/watch?v=UiOWvkTjClQ
