I have destroyed folks in PvP and while raiding using just a $10 keyboard and mouse while MMOing with a 120 ms latency. I can't speak for FPS games though, but with an MMO, if it comes down to the response time of your keyboard and mouse, you're doing it wrong. It's about dexterity, making proper choices of skill/ability usage, and practice. That's what makes MMOs playable by those without nanosecond twitch reflexes and sub 20 ms ping times unlike FPS games.
It's not about response time, I think that's about the same across the board. It's about having more buttons/hotkeys in reach. You can get around this by binding into ESDF vs WASD and using letter-buttons and modifiers though. Again comes down to preference, of course you can do just as well with a regular mouse and keyboard if you're really used to it.

Comfort and performance are my criteria. I have experimented with many, many keyboard/mouse combos and settled on;
Saitek Cyborg keyboard @ $55
Razer Death Adder Mouse @ $40
Steelseries gaming mouse pad @ $30
While I could substitute a few other mice or mouse pad, I find the keyboard critical. I am very selective of key tactile feel and form factor and Saitek is the only kb that truly suits my taste.

Many of your more expensive keyboards are back-lit, which is actually why they cost so much more.

Another thing I like about my G series keyboards. That and setting color based on which mode I am in is nice since I use the macro keys a lot surprisingly enough more for work than gaming.

I have tiny girl hands, I have to have a small egro mouse, and I don't buy fancy keyboards unless you count the "natural" as fancy. I'm starting to have a hard time finding these keyboards anymore, and haven't been able to find one that is USB so far

The Natural Elite is the one I use, looks like they finally figured out that people still use them and wanted them in USB, a year ago I had to get a PS2 keyboard
my keyboards last forever though, the one I had before this was bought at Boeing Surplus, so it was likely already 5 years old when I got it, and I had it another 5 years.

For some reason the black one is a lot more expensive on Amazon.
