Anybody can boil water.
Toasting coconut is tricky and I've never done it before.
In all seriousness, yeah, I can imagine it would be very easy to burn it because the bits are so tiny.
I toast slivered almonds all the time in my toaster oven and I always walk a very fine line between scorching them and beautifully toasting them. I can imagine coconut could be a lot trickier.
I do nuts in a cast iron skillet or in the oven.
Due to the high sugar content in coconut it burns very easy.

I used the oven to do it last week for the first time. at 350, it only took about 3 minutes to toast. I made a point of moving it around every minute or so, if it stayed in one spot it burned. It's a little tricky, make sure you have extra.

Here is my method that I use EVERY TIME for coconut. It consistently turns out the same:
Preheat oven to 350 degrees.
Take entire bag of coconut and DO NOT OPEN IT. I repeat, DO NOT OPEN IT.
Walk over to your garbage can and throw the entire thing away, unopened.
Do not buy anymore coconut.
Coconut is gross and should not be consumed. Seriously.
