1 c rolled oats (large flake)
1 c buttermilk
1 c whole wheat flour
1-1/2 tsp baking powder
1/2 tsp EACH baking soda and cinnamon
1/4 tsp salt
1/3 c EACH liquid honey and veg oil (I use sunflower oil)
1/4 c well packed brown sugar
1 egg
1/3 c roasted, unsalted sunflower seeds
1. Line muffin cups with paper liners or lightly spray; set aside.
2. In a large bowl, stir oats with buttermilk; let stand 15 min. Meanwhile, in a separate large bowl, whisk together flour, baking powder, baking soda, cinnamon and salt.
3. Whisk honey, oil, sugar and egg into buttermilk mixture; pour over flour mixture. Sprinkle with 1/4 c of the sunflower seeds; stir just until dry ingredients are moistened.
4. Divide among prepared cups filling each 3/4 full; sprinkle with remaining sunflower seeds. Bake in centre of preheated 375F oven until tops are firm to touch, about 17 min.
5. Let cool in pan on rack for 5 min. Remove from pan and let cool completely
