Apple-Cranberry Spice Muffins


RECIPE INGREDIENTS:

1 1/3 cups flour

1/2 cup sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

Pinch of ground cloves

Pinch of salt

2 eggs

1/4 cup canola oil

1 cup sour cream

1 large Granny Smith apple (or other tart variety), peeled, cored, and finely chopped

1/2 cup finely chopped walnuts (optional)

1/2 cup sweetened dried cranberries


DIRECTIONS

1. Heat the oven to 400° F. Grease the bottoms only of 12 standard muffin cups.


2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. In a medium bowl, whisk the eggs, oil, and sour cream until well blended. Add the egg mixture, apples, walnuts (if you're using them), and dried cranberries to the dry ingredients. Stir just until the batter is blended, then divide it among the muffin cups.


3. Bake the muffins for 15 minutes or until a toothpick inserted into the center of one comes out clean. Let the muffins cool in the pan on a wire rack for 5 to 10 minutes before removing them. Makes 1 dozen.

Pumpkin Apple Streusel Muffins - 18 Servings


NUTRITIONAL INFORMATION

1 serving: Calories 249; Carbohydrates 43g; Cholesterol 26mg; Dietary Fiber 1g; Fat 8g; Sodium 184mg

INGREDIENTS

2 1/2 cups all-purpose flour

2 cups white sugar

1 tablespoon pumpkin pie spice

1 teaspoon baking soda

1/2 teaspoon salt

2 eggs, lightly beaten

1 cup canned pumpkin puree

1/2 cup vegetable oil

2 cups peeled, cored and chopped apple


2 tablespoons all-purpose flour

1/4 cup white sugar

1/2 teaspoon ground cinnamon

4 teaspoons butter

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees C). Lightly grease 18 muffin cups or use paper liners.

In a large bowl, sift together 2 1/2 cups all-purpose flour, 2 cups sugar, pumpkin pie spice, baking soda and salt. In a separate bowl, mix together eggs, pumpkin and oil. Add pumpkin mixture to flour mixture; stirring just to moisten. Fold in apples. Spoon batter into prepared muffin cups.

In a small bowl, mix together 2 tablespoons flour, 1/4 cup sugar and 1/2 teaspoon cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle topping evenly over muffin batter.

Bake in preheated oven for 35 to 40 minutes, or until a toothpick inserted into a muffin comes out clean.

Cinnamon Rhubarb Muffins


These muffins turn out perfect every time. I like to add some finely ground almonds or walnuts to the topping .. and when I have some in the house, I add some apricot jam centres (simply pour in 1/3 of the batter; add 1 tsp jam; continue filling with batter to 2/3 full .. doing this usually gets ya an extra amount of batter to make just 1 more muffin )


1/2 c firmly packed brown sugar

1/4 c butter, softened

1 c sour cream

2 eggs

1-1/2 c flour

3/4 tsp baking soda

1/2 tsp cinnamon

1/8 tsp ground ginger

1/2 tsp lemon extract (or 1 tsp freshly grated lemon rind)

1-1/2 c fresh rhubarb, sliced 1/4"


Topping:

2 tbsp sugar

1 tbsp brown sugar

1-1/2 tsp ground cinnamon


1. Preheat oven to 375°F. Combine brown sugar and butter in large mixer bowl. Beat at medium speed until mixture is creamy. Add sour cream and eggs; continue beating until well mixed.

2. Stir together flour, baking soda, cinnamon and ginger in medium bowl. Stir flour mixture into sour cream mixture by hand just until moistened. Add lemon extract to rhubarb. Gently stir in rhubarb. Spoon into greased or paper-lined 12-cup muffin pan.

3. Stir together Topping ingredients in small bowl. Sprinkle mixture on top of each muffin. Bake for 25 to 30 minutes or until lightly browned. Let stand 5 minutes; remove from pans.

My mother in law makes these all the time and my daughter loves them.


Raisin Bran Muffins


1 1/4 cups all-purpose flour

1 tablespoon baking powder

1/4 teaspoon salt

2 cups Raisin Bran cereal

1 cup nonfat milk

1/2 cup unsweetened applesauce

1 egg, slightly beaten

1/3 cup brown sugar, firmly packed

2 tablespoons butter, melted


Directions


Preheat over to 400F; prepare a muffin tin with paper liners or by spraying with cooking spray.


Mix flour, baking powder, salt, cereal and milk in large bowl; let stand 3 minutes.


Stir in egg, applesauce, sugar and butter; stir just until moistened (batter will be lumpy).


Fill each muffin cup 2/3 full.


Bake at 400F for 20 minutes or until golden brown, and they test done with a toothpick.

Got this recipe from my MIL. They're my guys favorite, so much so that the guys will let bananas rot in hopes that I'll make these. (I've resorted to "banana blackmail". I'll buy two bunches. They eat one bunch, and I'll make muffins with the other)


Banana Chocolate Chip Muffins

3-4 large bananas, smashed

3/4 C sugar

1 egg, beaten

1 1/2 C flour

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1/3 C butter melted

1/2 C chocolate chips


Mix all ingredients but chocolate chips well, stir chips in at the end. Fill muffin cups 1/3 full and bake at 375 degrees for 15-20 minutes.
