Another mom made cupcakes for my daughter's Pumpkin Festival in her class last week. The cupcakes were great and she gave me her recipe.


1 box chocolate cake mix

1 can pumpkin

Mix together and bake according to the directions on the box.


That was it. They were very moist. I've heard of substituting applesauce for the oil but I never heard of this before.


She did say it looked a little lumpy after it was baked but it tasted fine and the bumps were hidden by the frosting so they even looked pretty.

That sounds really good! One of the best muffins I've ever eaten was a pumpkin muffin with chocolate chunks, so I can see how this would work.

My brother in law made us a cake with Mom's new cookware..it had NO eggs, and had zuchinni, carrots, and another veggie in it. You couldn't taste it and the cake was So moist! yummy!

oh wow

so i made these today. the batter was really thick, but that helped with making sure the cupcakes were even It WAS a little lumpy because the batter didn't spread too easily. but oh my god are they delicious. the pumpkin is just a hint of a taste and tehy're not sweet. well they ARE sweet but it's a subtle sweet. and omg are they yummy

I'm wondering how it would taste if I used a spice cake mix. I think that would be yummy.

Do you use normal solid packed pumpkin or the Libby's pumpkin pie stuff (that already has spices, etc. in it?

The mom who gave me the recipe just used regular pumpkin without the spices. I think either would work if you like the pumpkin pie spices.

I'd make it with the solid packed pumpkin, I think...just wanted to check though. This sounds good. I'll have to try it out.

I will try this over the weekend. I am also going to throw in some walnuts to it.


Which is awesome, because I got free pumpkins from work (I work at a grocery store), so I have 2 nice sized pumpkins to seed (yum! I love roasted pumpkin seeds) and bake. I don't really care to make pumpkin pie from any other pumpkin than the squash-type (the smaller ones), but I do make pumpkin cakes, muffins, etc from this kind of pumpkin.


Yay for baking!
