i bet it would taste good to hollow the very center of a gigantic potato out and stuff it with
monterrey jack and diced portabella mushrooms
put the potato back together and wrap it in bacon
then stick it in the oven

BLT's or german potato salad. I like to use 1/2 olive oil and 1/2 bacon fat along with a healthy dose of vinegar and spices in the potato salad.
