I cannot tell you how many times we had that for breakfast when I was a kid - chipped beef and gravy over toast.

was it actually called chipped beef and gravy over toast, or did you use a more informal name for it?

I think when we actually said the name we said "with" instead of "over". That is the informal name. I'm not sure if it has a more formal name. It was really just a description of the food.

Or did you mean SOS? My mom would've beat the snot out of us if we had cursed back then.

SOS = s$%t on a shingle

.... the chipped beef is only corned beef that has been chopped up real small

Creamed Chipped Beef sounds more formal to me.
