Used Julia Child's method to make perfect white sauce. |
2C milk
2T butter
3T flour
heat milk to boiling.
Melt butter on low heat in heavy sauce pan. Add flour Stir it on the bottom for one minute.
Get a wire whip, take pan off heat, pour in boiling milk while stirring vigorously with whip.
Put back on medium high heat and bring to boil while stirring with whip, boil for one minute.
Add salt/pepper to taste.
Worked flawlessly, no lumps, just a smooth creamy sauce.

Fry 1/3lb sausage.
Remove cooked sausage. Keep rendered fat in pan.
Follow the directions above except with a dab more flour.
Crumble and add the sausage back into the pan. Dash of salt & pepper.
Spoon this awesome sausage gravy over some biscuits.

Let the flour get a little brown to add a nutty flavor.
Let it get black and you have a cajun roux.

I cannot tell you how many times we had that for breakfast when I was a kid - chipped beef and gravy over toast.
