Steak.

Get the grill super hot, drop it on and season for 4 minutes. Flip and haul it off in another four minutes.

Enjoy.

Ribs


preheat oven to 300


make a foil pan


dry rub the ribs with: Garlic powder, sea salt, fresh gorund pepper, smoked paprika, finely mince a small onion,2 rosemary sprigs stripped, and 3 cloves of garlic mash the garlic onion and the dry herbs all together so its pasty like, smear that all over the ribs


wrap in the foil and either cook over bbq for 3 hours over low heat or in oven (lower temp to 275 when you put the ribs in)


CAREFULLY open the foil save all the juices that will have accumulated.


pour the juice into a small sauce pan mix with your fav BBQ sause heat until it starts to boil then remove and let set a few mins.


throw the ribs on a hot grill let them get smoking hot turn and baste with sause, turn again when the bottom side is hot and baste that side. cook until sause is carmelized and well you know looks a bit charred.


Grilled onions (really good with a fat steak)


peel and then carefully hollow out the center of the onion pack the inside with real butter. wrap with foil grill until soft ( its amazing how good these taste and yes you can even use an "old yellow onion"


Fresh trout


pack the inside with the following


chopped onion a tiny bit of dill, zest of a lemon, and then slice the lemon thin and place that inside as well.


oil the grill


cook on each side around 3 mins it does not take long of course this time will depend on how big your trout are.

I have tried at one time or another just about anything on my grill. Like has been said already temp control, leaving the food alone are teh keys.

If you are a serious griller/smoker you should invest in on of these

Big Green Egg they are worth every penny,

yes they are compared to others. But like I said once you try it you'll love it.

yes they are compared to others. But like I said once you try it you'll love it.



I prefer a Hasty Bake over a Big Green Egg but Big Green Eggs are nice

another secret to Ribs - when you put them in the oven, wrap them in heavy duty saran wrap before wrapping in aluminum foil
