I should get the first one in a few days it just started to turn red Saturday.

Salsa recipes?

I will of course slice many a top sandwiches and many just quartered. Any other suggestions? I might freeze some but I'm not going to can.

i use this

4-5 tomatoes
1 red onion
3-4 jalepenos
bunch of cilantro
2 tablespoons garlic powder
3 tablespoons salt

(avocados are optional)

chop up veggies and salt them -- let the water drain out

add everything else --- sit it in the fridge for a few hours

I will try to remember to look mine up when I get home. It's a Frugal Gourmet recipe I got years ago watching the show on PBS.

Yeah, he was an awesome cook and this is a great salsa recipe. I just have to remind myself to find it in my recipe box.

I just used some of our tomatoes last night. Made a real simple salad

Tomatoes
fresh basil
mozzeralla cheese
red onions
olive oil

jalapenos

pepper
cilantro
lime juice
garlic


chop all kinda small, add the lime juice and there you have some pico

refrigerate for a bit to set and meld the flavors and yummies


if you hit puree, as chunky or smooth as you like, you have salsa.
can add a small juice can of spicy v-8 to this to if you wish

Jeff Smith's (The Frugal Gourmet) Salsa


Ingredients

4 cups ripe tomatoes, cored, seeded, and diced

5 Jalapeno peppers, seeded and diced

2 med yellow onions, peeled and diced

1/2 green bell pepper, seeded and diced

1 cup tomato sauce

1 tsp salt

1 tsp minced or crushed garlic

2 tbsp chopped fresh cilantro

1 1/2 tbsp red wine vinegar

Splash of Salsa jalapena (La Victoria)


Instructions

Fresh salsa is surprisingly easy to make and so much better than supermarket sauce. It will keep several days in the refrigerator. Do not cook. Simply mix all ingredients well and add salsa jalapena to taste.

That is the same recipe I use pretty much. Except I use Serrano instead of Jalapenos
