I got a big bag of frozen salmon and frozen flounder. I chose frozen because I want to be able to cook it after I get home from work and don't
want to stop and buy fresh.

Don't think I'll have any problem pan searing it though I'll probably overcook it at first until I get the hang of it.

That leaves poaching and baking, have zero good recipes.

Anybody have some good ones they'd like to share?

I think that is how it is commonly done, but I avoid the (outside) grill at all costs.

Simple one for poaching that I use is a little bit of Butter in the bottom of the tin foil put the fish in. take a lemon or a lime and cut a few slices off and then Juice it. Put the citrus slices on the fish and fold up the sides some then pour the juice in. Salt and Pepper toss it in the oven I usually do 350 for about 15 minutes. But I can't remember off the top of my head

I just pan sear it. Basically spray a little olive oil on the bottom of the pan, spice up the fish (lemon pepper, cayenne) and place it in the hot pan. Flip it when the bottom side is browned. Hit it with lemon or lime juice when done.


I don't poach fish. The last thing I want to do is turn on the oven, especially in the summer.

i grill it

if you are worried lokkie you can put it on a skillet or pan of some sort and let hte grill outside be an oven

wont heat up the house that way

I need to go to the local cooking school to learn how to cook fish. I know techniques temp and timing on most cuts of beef, chicken, lamb and pork but alas I never learned much about fish out here in the Midwest.

Pan seared salmon with nothing but salt and pepper, cooked rare or no more than medium, is pretty damn good and very easy.
