blackend catfish is one of my favorites

i like to serve it with rice.
i cant cook rice to save my life though so i usually just buy one o them liptons rice side dish things.




stick to a simple one so it doesnt detract from the catfish and can also tone down the heat level when your mouth is on fire.

Catfish is the opposite of salmon. Salmon should be prepared very simply without strongly flavored ingredients but catfish needs a strong sauce or rub or some oil to fry it in.

I saw fried and blackened already in this thread. The other thing that comes to mind is using it in indian or thai curry. It is an excellent fish for curry.

Catfish au Lait via one of my favorite cooks Alton Brown. I have made this recipe before and love it.

1 (12-ounce) can evaporated milk
1 teaspoon crab boil seasoning (recommended: Old Bay)
1/2 teaspoon freshly ground black pepper
1 1/2 teaspoons kosher salt
1/2 onion, thinly sliced
3 to 4 catfish fillets

Combine the milk, crab boil seasoning, pepper, salt, and onion in an electric skillet (I just use a big pan), cover, and bring to a simmer. Add the catfish to the liquid, spooning some of the liquid over the fillets.

Reduce the heat to low, around 140 to 145 degrees, cover the skillet, and poach for 6 to 9 minutes.

Catfish is great. You just can't cook it the way you cook other fish.

Catfish > salmon IMO if only because salmon is super overrated.
