Any kind of stimulant or substance that could lead to addiction is bad to them. So no caffeine at all, not just coffee / tea. They just haven't bothered to update the Official Book of Stupendeousness since '72 about it.
That isn't true. They can drink caffeine. Not against the church rules.

you said it wasnt the caffeine. what is in tea and coffee that makes them bad? what substances please?

"One more time! The Word of Wisdom is an official document of the Mormon Church, part of the canon of scripture to which we pledge adherence when we are baptized. At baptism we make a sacred covenant to obey the commandments of Jesus Christ. The Word of Wisdom was accepted by a general conference of the Church shortly after the Saints moved west, as binding upon the members of the Church. In particular, tobacco, alcohol and “hot drinks†are to be avoided. The Church has defined “hot drinks†as used in the revelation as tea and coffee. Tea is defined as the regular tea that was in use at the time, not teas made from beneficial herbs. Since that is a canon of the Church anyone who does not adhere to those restrictions is in direct violation of the commandments, and normally would not be issued a temple recommend or advanced in the priesthood."
So once again, they can drink caffeine, just not coffee or tea.

This I do not know. It's obvious of course about the alcohol and tobacco, but for the rest there is some debate- some say it is the caffeine, some say it is something else, some say it is because the drinks themselves are hot (but hot cocoa and cider and milk would be ok), but from church leadership nothing official apart from "don't drink coffee and tea". At least as far as I'm aware!
edit: and achim is correct about the clarification on teas, as well.

It's not just that they are hot but that they are from plants "not designed" by God for human consumption. You drink those "chemicals" from coffee or tea and your body feels different from how God intended.
