I'm not really sure how it translates because I started by cranking the difficulty to max, but I started by maxing smithing to get wicked daedric armor. after that you can tank a dragon OK

Since I just started playing Skyrim, I put the skill level onto Apprentice (the easiest). I'm playing a cat, with emphasis on thievery-type stuff (sneak, pickpocket, daggers for weps, etc) and using a bow as much as possible. What I have a very hard time accomplishing is shooting the damn dragons as they are flying around overhead. When they hover, wings spread, yeah, that's a couple easy shots but I waste more fricking arrows as they are flying around...  . But, between myself and Lydia (and now Janessa) dragons are not a problem as long as I pop a health potion and blow a couple shouts at them.
Only thing is, it seems every time I leave a big town and head for somewhere to do a quest, I run into a dragon...are there supposed to be more and more of these dragons popping up everywhere as time goes on? Should I have tried to race my way through without any sleep time, or sideline quests to avoid seeing so many dragons? Edit: but, to answer, I've been killing them every time I run around since I saw my first one at level 4 just outside Whiterun. Never solo though, my "companion" is always with me, so not sure if that counts??

Terrain is your friend -- just stand and be blasted doesnt work until later in the game.

I'm fairly high level, in the 30's and I can't just melee a dragon. Mainly because all my damage is based on sneak attacks and daggers

It is kind of funny to sneak up on a sleeping dragon and .....

Oh they certainly do sleep and can be stealthed and stabbed.

I go all Sith Lord on them and cook them with Double Lightning spell. They tend to drop easily enough.
I can kill them without dying

I did that once to a dragon sleeping on top of some tower. Can't recall where it was though.

A thing to be aware of is the scaling.
If you focus on non-combat skills or spread yourself too thin, the difficulty scales up faster than your combat abilities. I made the mistake of leveling smithing, enchanting, alchemy and lockpicking all in a short period of time. I gained like 10 levels off of it and not a lick of it was in combat skills. As such, dragons and other monsters scaled up 10 levels of difficulty, but I was still behind those levels in combat skills.
I've since focused back on combat skills and the 100 smithing and enchanting lets me make some fearsome gear and all is right again.
