What about Crossfire?
Haven't had any problems there except for Blacks Ops, except that game wasn't ported over well.
unless you are doing an SLI or Crossfire of the best card out there, the cost of buying two cards easily is defeated by buying one card for the price you'd pay for two that's FAR better.
as in, if you buy two $250 cards, you might as well spend $500 on one card that will out perform the crossfire/SLI configuration due to the percentage of loss you get on the second card.
SLI has benefits for people with less money to spend....
it's about the same to buy one 570 now as it is for two 560ti's....and it is better to buy one 570 but 2 years down the road that 570 isn't going to cut it....SLI provides the benefit of being able to buy an outdated or used model for a fraction of the cost of whatever new card comes out and get roughly the same performance
there are tradeoffs no doubt like power consumption....heat build up....some games not supporting SLI...microstuttering.....etc .......but that stuff is offset if you are on a budget later in the life of the computer and just trying to get some more play out of it
SLIing later in a computer's life can save you 25% overall and 50-75% over a new card purchase...and add years to the computers functional life
