Read the Lankhmar series all about the adventures of Fafhrd and the Gray Mouser by Fritz Leiber. You'll get PLENTY of material, and some great reading.

my minecraft castle town right now has:
Church
Graveyard
Crypt
Four bedroom Inn (really five if you count the Innkeepers attic room)
two houses (Miss Scarlet and Colonel Mustard.)
Outer walls
Towers
Gatehouses (large gatehouse is furnished with barracks, training hall and kitchen. Little gatehouse will be furnished along the same lines.)
Town Square with Market Stalls
Dock
on the docket for me to tackle:
Forge
more houses. Mansions maybe?
Actual Castle
Outside the castle walls I want to build a "poor" neighborhood fishing village. (made with wood instead of cobblestone and sandstone.)

The real sad thing is that even though wood is seen as the "poor" that crap is worth way more than cobble lol...

How many chest fulls of wood have you gotten? I've never filled a chest with it... Cobble... I have 5 Double chests full >.<

wood I let grow on trees before wiping out my forest. I often have more wood then cobble
right now that is not the case cause I'm stocking up on cobble for my next building haha. but I wipe out Steel's and Sneezies chests of cobble!

Some sort of sage or lore master.
Also a place to buy comps for a wizard.
Jewelry store.
Map store dont the dnd term for it.
Book store to find lore or writing supplies to draw maps.
Leather store.
Stables
granary
water tower.
guard house
Jail
Court or official type building where town matters are discussed and dealt with.
Soldier barracks or militia armory. Probably near stables
Officer quarters
Noble housing
