Had one of those bread machines for a few years and found that I was making bread 2-3x a year -- hardly worth it. When we moved, the bread machine moved to the dump with a lot of other items. I wouldn't mind getting another one, with a much better mixing "paddle" that doesn't bury itself in the bread.
I should try to get the recipe for the wheat bread my dad used to make when I was a kid -- it had whole wheat flour, molasses...damn but that was some good gread.
Now I want some warm, fresh bread.

I loooooove making bread. I can make it by hand completely if needed, but I don't have the time for that these days. So I use the bread machine, but only on the dough setting. I do the shaping and the final rising by hand, and then put it in a loaf pan and bake it in the oven. I can't stand the way bread machine loaves turn out- with that paddle hole in the bottom, weird shape, hard as a rock top crust, etc.
I have also discovered the secret to a soft-crusted bread. I don't mind a nice crunchy crust at times, but other times I want to make a bread suitable for sandwiches and a hard crust is NOT what you want for sandwiches. To get a soft crust, you just butter the entire top of the loaf of bread the instant it comes out of the oven. You can use any kind of fat (whole milk works, etc. but not skim) but I prefer butter. Makes the crust nice and tender, perfect for sandwiches.
Dammit now I want to go make bread RIGHT NOW.

Yep. No bread machine. I do quick breads (banana, zucchini, cornbread) as well as yeast bread for pizza, pepperoni rolls and dinner rolls.

Awesome, we were talking about this last night when discussing doomsday scenario cooking. Cooking skills will be valuable especially with long shelf life dried goods.
