Read a book not to long ago that explained in the science fiction world of zombies and why they eat living tissue only. They don't need to eat to continue existing. It's the virus that keeps them moving and nothing rational about it. The virus needs to infect and the zombies are a host that accomplishes that. It can't already infect a zombie so it seeks out clean humans and animals to infect. But there is a hunger that exists in the infected and so they go through the movements of eating even though they don't need to. Infecting is enough for the virus but it can't control that base need of eating.
I like how in the resident evil series the birds were infected to and anyone bitten by them would be infected.
