There are just so many of them. It seems like they would make for a good food source in tough times.

Maybe because it's easier to come by meager sustenance elsewhere. Even hunting rats or stealing chickens would probably be better than digging for earthworms.

A colony of larvae and a few insect traps could yield a day's meal couldn't it? They could even dry preserve them for bad seasons or try to market and export the surplus.
