At one year of age she's not going to remember any of it. I think you should do what you and Cutt want to do. You'll have plenty of years to treat her to places. Even taking her to a kids movie is probably more info than she can process right now.
minus the movie, do something more interactive like swimming. unless you want your kid to grow up being a blob

I was thinking more along the lines as what we can do as a family. i know she won't remember it, and activities that a 1y/o can't do, most disney rides, most waterpark rides, won't be fun if one of us has to watch the kid while the other goes and does the ride.

there is nothing for a 1 year old to do...you go on a vacation for yourself and bring the kid along or leave him/her with someone you trust for a few days...
you can't go on a rollercoaster of any kind (what kind of freak parent would put a 1 year old on one even if they allowed them anyways?)...And it's not like you can go look at pretty scenery and the kid will enjoy it.
Just go somewhere you want to go where bringing a kid wouldn't be a big hassle (beach is always good, especially if they're walking pretty well) and save up for something big when the kid is about 5 or 6 and go to disneyworld or something.
