I think its the type of grits used.
I still buy the 20 min cook grits, because those make the best grits I think.
The instant and 5 min grits dont have the same consistency, when cooked according to directions.

IF I ever cook instant grits, I still cook them for 15+ minutes, it helps with the consistency issues.
I use salt and butter on mine, where my wife and kids like it with sugar... WTF????

I like properly prepared grits, but oatmeal is easier and more of a go-to breakfast staple.
