Typically wineries around here will charge you for a tasting, but waive the fee if you purchase something.
You'll want to taste like this:
1. Grab the glass and stick your nose in it. Sniff a couple of times and get the scent of the nose of the wine.
2. Swirl the glass a bit to aerate the wine, and then put your nose in again. This will change the scent of the wine (and is called the 'bouquet'  .
3. Take a small sip of the wine and let it sit or swish it lightly around your mouth, then swallow. Don't act like you're gargling mouthwash. This will give you a good feel for the wine's flavor and finish. Wait a bit for the taste to leave your mouth so you get a good idea of all the flavors of the wine.
4. Finish the rest of the sample at your leisure, or pour the rest out. I know this is counter-intuitive, but if you've got several wineries to visit and you drink all the samples you get, by the end you'll be far too buzzed to care about actually tasting the wine and just down it.
Wineries usually have water and palate-clearing crackers on the tasting counter; you'll want to have a cracker and a bit of water in your glass periodically when tasting reds, and always before switching from red to white and vice-versa.

This is why I say - make friends with chefs that are local to the wineries.
Then go with them to the tastings.
In Napa, at least, if you're a local chef - tastings are free, and wines are discounted.

you know how when you drink beer, you taste certain ingredients?
wine has flavors upon flavors also
cherry, citrus, green peppers, smoky oak. peach
all sorts of things.
had one the other day if you took a sniff, and thought about it, what you were smelling was leather.
its the same principle.
for your dessert wines, it will be is this too sweet for the flavor? not sweet enough? if i had this or that dessert, woudl this flavor get lost, or be too strong.
same as with a wine you sip alone or with food.

Use a fake English accent, that's what I hear in my head whenever I'm describing the taste of wine.
As much as my wife and I are wine snobs (she's been taking viticulture and winemaking classes, wants to start her own winery), I can't quite take it all seriously. It's all very...pinkie-up.
