Have a photo or two with an almost pure white sky. Nice sunny day, everything else is perfectly exposed, but I really want to put in a nice blue sky. Suggestions? Just paint it in?

If you shot in RAW, the info might still be there. Maybe. Possibly.
When you open the file in whatever RAW converter you use, drop the exposure way down to see if you get the detail that you need.
Then:
Expose and process once for everything but the sky. Save the file.
Expose and process once for the sky - lowering the exposure a lot to see if the detail in the sky comes back.
Overlay the two images. Place the dark image on bottom, and the blown out sky image on top. Erase the blown out sky hopefully letting the better looking sky come through.
Does that make any kind of sense?

Yea, didn't think of playing with the RAW file. I'll try that when I get some time tonight. Thanks.

Open the raw file, edit the way you want it. Save as psd
Open the raw file, edit so that the sky looks good. Save as psd
Open the first psd
Open the second psd
Copy the first psd into the second (so the correctly exposed sky is on top
Use the eraser untill you're happy.

I was beginning to wonder if I should keep shooting JPEG+RAW or just switch to JPEG. I think I'm going to stick with it after seeing it salvage this picture.

Good move as I always tell people to use raw for everything. Not enough room? Buy a bigger memory card as they are dirt cheap nowadays.
Good work DC.
