Thanks Foxy, unfortunately I'm too lazy to carry around a bulky camera. I think I need to buy a very good compact camera at some point just for those moments when you wish you had a camera handy.
Any recommendations anyone?

I am biased towards cameras... so take it as you will.
I ALWAYS have my Canon SD1100 Elph with me, and when my wife lets me take the Canon 50D along on my travels, I have it at the ready. We will be buying another camera soon, not sure if I just want a 40D for a backup and take around with me, or bite the bullet and get a 5D mkI.
I love canon, just my preference. I am sure Nikon is good too, but....

I'm a Canon fanatic too, I'm currently using a Rebel xti that I bought a few years ago on the recommendation of the guys here and I have no regrets at all, I still love it
I've thought about getting the powershot simply because it is Canon but it's hard to get point and click advice from serious photogs, I tried that before and ended up with my rebel

I don't know of any "professional" photographer that doesn't carry a pocket P&S with them.
that almost "instant on" is great with good P&S cameras. With my 50D, I have to take the lens cap off, turn it on, wait 5 seconds for the sensor to clean, then take the shot, by that time, the moment is gone.
Everything has a purpose.

Is there such a thing as a compact that allows you to adjust your depth of field?

DoF is controlled by your aperture. Any camera that allows you to run in AP mode (Aperture Priority..not sure what it is with Nikon) yuo can control your DoF. That is also controlled by camera to subject distance, and subject to background distance.
for example, I was about 3 feet away from the subjects and the subjects were about 6 feet away from the tree, shot at f/1.8, at 1/60sec ISO-100 with focal length of 50mm
if I would have shot that at say, f/11, the tree would probably been in focus also.

The bokkeh on that shot is fantastic, I love playing with the DoF when I shoot. I always shoot in Av on my SLR so since that compact has Av mode I'm very tempted, most of the ratings for it are excellent, though there are some complaints about the position of the flash and blurring on the edges of the shot, I think I can handle that for something I can slip into a pocket
