Author Topic: Dad's Home Grown Corn Chowder [Locked]

2 Tbsp Good Olive Oil

1 Medium Yellow Onion - coarse dice

4 Medium Carrots - pealed and cut into rounds

4 Medium Celery Stalks - washed, coarse dice

6 Medium Potatoes - pealed, coarse dice

3 12 oz Cans of Creamed Corn

~24 oz/ ~2 cups Kernel corn - canned or frozen or fresh

1 to 1 1/2 quarts milk (Lactose Free is ok)

6 strips of bacon cooked very crisp.

Salt & Pepper

In a saucepan or large pot, drizzle 2 TBSP of Good olive oil (Extra Virgin)

Warm pot on medium heat.

Add Onions, Carrots, and Celery - sweat until onions go transparent and carrots and celery start to cook. (5-10 mins on medium heat, stir often).

Add Potatoes

Add Corn (Creamed and Kernel)

Add Milk.

Salt and Pepper to taste.

Reduce heat to lowest setting and allow to simmer slowly until potatoes are cooked.

Stir regularly.

Ensure that the Chowder does not boil or burn.


Serve in a bowl hot with crumbled crispy bacon sprinkled on top.

Yields 8-12 servings.

Freezes Gracefully.

oh I'm SO making this!! Thanks I'll let you know how it turns out. Though today it was 97 freaking degrees here LOL So give me a few weeks so I can make it when it cools down.

I tried this but instead of using canned cream corn, I used fresh all around.


To make homemade cream corn - use heavy cream and mix with 2 parts corn that you pulse in a mixer and 1 part kernels. Also try to find the freshest sweetest corn on the cob you can find and then remove the kernels yourself.

I've done that before for other recipes. It's easier to just use corned corn, and for me, the taste tends to be very similar.


Each his own though, that's what makes cooking fun.

The taste is similar and I'll use frozen corn but I don't like all the crap and preservatives that are in canned corn

Made it today. It was really solid...but seemed to be lacking a kick. I am certain it is because I used canned corn. I am going to try it with fresh corn in season, although it is a little hearty for a summertime meal.
