1 pound lean ground beef

1 medium onion - chopped fine

2 stalks celery - chopped fine

1 teaspoon chopped

3 teaspoons cumin

3 16oz cans tomato sauce

1 cup rice

6-8 bell peppers -- caps off - seeds out


brown ground beef on stove top in dutch oven on med-high heat

drain off excess grease

add in chopped onions

add in chopped celery

mint leaves

cumin

(other herbs as desired - oregano - basil etc.)

salt

black pepper


sautee until veggies are tender

add 2 cans of tomato sauce

simmer for 5 minutes


add 1 cup of rice


cover

reduce heat to low


let it sit for 5-10 minutes - until rice is tender


stuff your peppers

open 3rd can of tomato sauce

add sauce to the top of the peppers

put the "cap" back on

put bell peppers back in the dutch oven

put the leftover rice / tomato sauce etc in

put the lid on the dutch oven


bake at 350 degree's for 20-30 minutes (until bell peppers are tender)

I use red peppers and I cook them upside down so they stay moister.

I use wild game meat when I have it. Venison and Bear so far.

hmmm I have never precooked my meat, I have always made like a meatloaf using cooked rice or bread for the 'filler' surrounded them with tomatoe sause put foil over the pan and baked until just about done, then I remove the foil sprinkle with grated cheese and put back in the oven until the cheese is bubble and yummy!


Tazzer I am patiently waiting for my son and son in law to get back from hunting they both promised me backstrap......Backstrap, fried taters and eggs I cant wait! ~drool~

backstrap is the tender muscle on the back that runs along the spine

we have always cooked out meat for stuffed peppers. we use diced tomatoes, though, instead of sauce. mikx a can of tomato paste with a cup or 2 of water and salt and pepper...and mix that with rice to surround the peppers.

Damnit Ayla, I is jealous. No hunting trip this year and only a precious couple packs of venison left. Next trip isn't going to be until October or November next year for Elk in Colorado unless I get surprised before then.
