1 medium onion - chopped fine
2 stalks celery - chopped fine
1 teaspoon chopped
3 teaspoons cumin
3 16oz cans tomato sauce
1 cup rice
6-8 bell peppers -- caps off - seeds out
brown ground beef on stove top in dutch oven on med-high heat
drain off excess grease
add in chopped onions
add in chopped celery
mint leaves
cumin
(other herbs as desired - oregano - basil etc.)
salt
black pepper
sautee until veggies are tender
add 2 cans of tomato sauce
simmer for 5 minutes
add 1 cup of rice
cover
reduce heat to low
let it sit for 5-10 minutes - until rice is tender
stuff your peppers
open 3rd can of tomato sauce
add sauce to the top of the peppers
put the "cap" back on
put bell peppers back in the dutch oven
put the leftover rice / tomato sauce etc in
put the lid on the dutch oven
bake at 350 degree's for 20-30 minutes (until bell peppers are tender)
