I haven't tried this yet, but I've been meaning to:

It's got your familiar beef. It looks pretty easy, yet fancy too. The nice thing is that the carb conscious can eat as much (or as little) of the pastry as they want. If you want to totally get away from beef, I'm betting you could use another of God's tasty critters as well.
I like garlic mashed potatoes with beef. My wife though is on a low-carb diet so we have faux potatoes a lot (steamed cauliflower that run through the processor with some type of good melting cheese). You can also go with winter squash. Slice in half, clean out seeds, bake in the oven (puree if you want a potato-like consistency).
For a festive touch, you could go with roasted asparagus and toss it with quartered grape tomatoes. Nice green & red accent. |

Pomme Puree
Glazed Carrots (hubby...)

Well, as it turns out, the brain injury conquers again. We're having a weenie roast instead. *sigh*
(we planned this night a week ago, and I had told my in-laws that we would cook for them - my MIL has post concussion syndrome so doesn't remember anything)

It's not even above freezing, there's snow on the ground, and I'm sick.
They want to pretend they're at a tree farm getting a tree - they actually cut a tree off their property this year.
