speaking of seafood ....
(sorry i do this a lot, something rings a bell and i just go ahead and post it)
muscles in spicy tomato sauce
a few pounds of fresh muscles (gun show baby)
fresh tomatoes (steamed peeled and diced)
a few cloves of garlic (baked in their own skin so they are soft)
a small onion chopped really fine
some green onions ... chopped
olive oil (or butter depending what you like)
basil
oregano
salt
white pepper
cayenne pepper
white wine (the more the merrier)
clean and rinse the muscles ... set them aside in a strainer
sautee the onions in a skillet
transfer contents to a stock pot
add your garlic, tomatoes, basil, oregano, salt, white pepper, cayenne pepper
bring to a boil for 15 minutes
add in a few cups of white wine (or half a bottle if you prefer)
bring to a boil again
add in the green onions 5 minutes before serving
.... at this point you can choose to add your muscles in (i like this option) --- or you can steam them seperately in plain water
serve with linguine or fetucine --- .... and whatever is left of the wine
