Sorry to hear about your oven but if you remove it and take it to a local appliance store, I'm sure they wouldn't charge too much to fix it. Oven doors are quite simple to remove.

Late to the party but here's what I would have done:
(Sorry about the oven as well)

Breaded Spinach-Stuffed Chicken

Soften butter
Thoroughly thaw and drain the spinach
Mince garlic, saute lightly in olive oil (don't burn the garlic!)
Combine garlic and spinach fold in to an appropriate amount of butter depending on your cardio-vascular fitness.
Butterfly chicken breasts, season with S&P and stuff with spinach mixture, roll making sure to tuck in both ends, wrap tightly in plastic wrap and place in the fridge for at least 30 minutes

Set up your breading station:

One pan (I like to use 9" round cake pans) flour, S&P to taste, add other spices to your liking
One pan of whole beaten eggs with 2 Tbs water per egg
One pan bread crumbs of your liking

Bread chicken bake in oven, probably about 20 mins total depending on your oven be sure to turn about halfway through

Saute to crisp up the breading then finish in the oven

Make sure to shake off excess flour after pan one, let excess egg drip off after pan two, coat well in pan three and press down lightly to adhere bread crumbs

If you'd like a sauce with your meal:

Saute diced onions in oil until lightly browned
Reduce heat and deglaze pan with chicken base (dry white wine if you had some)
Add cream or milk and lemon juice
Bring to a simmer to thicken to desired consistency
Serve on top of chicken

Chop celery and carrots in about 1-2" slices and cook them up in a wok with some sesame oil, S&P, and any other veggies you have lying around or just feed them to the rabbits.

This may not be a "What should I make tonight kind of meal" depending on how long you plan to be in the kitchen but it was the first thing that came to mind.
