yum ... every now and then I do impress myself. real simple, but came out surprisingly good!

any type of pasta
2 chicken breasts
home made pesto (http://vnboards.ign.com/cb_cooking_food_and_drink/b23015/111169279/p1/?4)
onions
garlic
Parmesan cheese


Bring water to a boil

Cut chicken breasts into pieces. Dip in egg/milk mixture, then seasoned flour.

Heat up olive oil in large skillet. Toss in onions and garlic.

Put pasta in water, cook per directions.

Throw chicken in pan, cook until done.

Drain pasta, toss into skillet with chicken. Pour in pesto, toss and serve. Sprinkle with parmesan cheese.

If you have a food processor and 15 minutes you can make your own pesto. It will be a lot fresher and A LOT cheaper. (The same thing is true for hummus). If you grow your own basil or get it from a Farmer's market it will be even cheaper.

I disagree about the cheaper bit (tho I'm a huge advocate of making your own)

I can buy a jar for $4.99 in my grocery store.

It costs me $3.99 just for pine nuts - nevermind the "other" ingredients necessary.

Well if depends on where you live and shop obviously but you should be able to make a larger quantity of pesto with a $3.99 bag of nuts than you will be getting with in a $4.99 container of store-bought.
