I usually sear the butt in cast iron and then steam cook it in a pot on the stove. It comes out really good and tender. Having used this system for a while, I got to thinking of getting a pressure cooker.


Anyone here try that for meats? Suggestions/warnings?

i love my pressure cooker

only once have i had a major blow out and blew beans thru the vent


it makes even the toughest piece of meat so tender.

Well then, I will beg my wife to "consider" a pressure cooker as a Christmas gift!

From an episode of Chef at Home (I believe it was), the newer pressure cookers are built in such a way that you shouldn't have to worry about accidents.

I just cooked a loin in the oven.

It was smothered in onions a few mushrooms tomato sauce a bit of basil and black pepper.

I used my fish poacher .

It turned out perfect the meat is so tender and as white as veal.

The sandwiches just melt in my mouth.

But pressure cookers are great to speed the cooking process reducing time from a couple hours to minutes.
