Anyone have any good chicken recipes? Looking for different ways to fix chicken. Any and all are appreciated.

Take a chicken, cut it in half using shears. Go through the back.

Rub it with a clove of garlic, season with salt/pepper.

Wrap a brick in aluminium foil

Place chicken skin side down on a medium skillet that's been drizzled with olive oil.

Put brick on top.

Flip after 10 minutes, cook 5 more. (egh, I think. I never time it but poke the breast to tell if it's done. I think that's right)

6 boneless skinless chicken breasts(or skin on if you prefer)

place in baking dish

sprinkle with italian seasonings (garlic, basil, oregano, rosemary, and whatever else you like)


bake in oven preheated at 350 for 15-20 minutes

remove from oven, pour off drippings

pour spaghetti sauce (jar or home made)over chicken breasts, and place back in oven for about 15 minutes to get sauce heated

remove from oven and sprinkle with mozz. cheese

place back in oven to melt and brown cheese a little.(about 10 more minutes)

nice salad and some garlic bread makes a meal!

One of my favorites is to put the chicken in a baking dish, usually boneless skinless breats, but can be done with any chicken. Just adjust the baking times. Squeeze the juice of 1 lemon all over the chicken, more if you have more than 4 or so pieces, and sprinkle with some rosemary. Bake at 350 for about 20-30 mins.


Another favorite is to cut the chicken in bite sized pieces along with a bunch of vegies...potatoes, carrots, onion, zuchini, whatever you have laying around. Toss with a little olive oil and your favorite seasonings (rosemary, thyme, sage, etc) and bake until chicken is cooked and vegies are tender, but not mushy.


I have tons of other chicken and pasta type recipes, but not sure what you are looking for.

chicken pot pie:


cook the chicken, baked or broiled or simmered. i prefer dark meat as it has more flavor but use white if you prefer.

cut up in small bites.

heat up a can of cream of chicken soup, or cream of mushroom. add soem mixed frozen veggies, or a can or 2 of veg-all, or use fresh. choice is yours.

add some stock or drippings to flavor and make more like a gravy.

salt, pepper, poultry seasoning, sage...the flavors that you like best.


put in to a pan and top w/ filo dough or use a pie crust, home made or not.


bake at 350 until bubbling and hot.


let is set a few to settle.

eat.

We like chicken pot pie at home as well but I make it a little differently.

I take a couple of cooked chicken breasts (or leftover chicken), cut into bite sized pieces and mix it together in a bowl with a can of cream of chicken soup and frozen veggies made for soup (they contain onions). I add salt, pepper and a little sage and then prepare a casserole dish with a bottom crust (I make my own but you can use the store bought kind too). Add the chicken/veggie mixture, add a top crust and pop into the oven on about 350 degrees for 40-45 minutes or until crust is golden brown. You might want to use a pie shield on the edges of the crust so it doesn't get too brown.

Preheat over to 350F.


Place four chicken breasts skin-side up in a baking dish. Salt and pepper each breast.


Cover with a bag of frozen broccoli florets.


Top it off with two cans of cream of mushroom soup. Spread the soup around to cover the broccoli and chicken.


Place in the oven and cook for about 45 minutes or until juices from the thickest part of the breast run clear. Serve with rice.

i've been cutting down oak limbs and burning the wood in my smoker and smoking the chicken

doesn't really need any seasoning at all ... just toss it on and smoke it for 3-4 hours
