a taste I acquired down South and still boiling to date


2 pounds raw or green peanuts

1 cup salt per gallon water - I cut this down to 1 per 2 gallons

2 gallons water

and I put some crab boil in mine couple tsp to give them a kick


Soak raw peanuts for an hour drain and rinse till water runs clear.


Place peanuts in big pot add 2 gallons water, salt, and crab boil. Brought to a boil continue to boil or salt will soak in to nut if it just simmers. Boil 6 - 9 hours. I live in high altitude needed to added 2 gallons water throughout cooking cycle. When done to the tenderness you like remove from heat and drain right away. Do not let them sit in water will absorb too much salt.


store uneaten ones in fridgerator in air tight container

Boiling peanuts has been a folk cultural practice in the south of the US since the 19th century, where they were originally called goober peas. In late August, when the peanut crops would come in, unsold and surplus peanuts would be prepared in a boiling, and extended families and neighbors would gather to share conversation and food. Like a fish fry, peanut boils have been organizing principles for social gatherings. Like okra, black-eyed peas, collard greens and pork barbecue, boiled peanuts are symbols of southern culture and cuisine.

I love boiled peanuts! They do take a long time to cook, though.


That said, nothing will give me worse gas. I have never lived down the Christmas Eve my dad made them for us....

Fresh boiled peanuts are better than roasted ones any day of the week but it is a seasonal food green peanuts have to be used.
