Time for our April contest!!
and since it is getting warmer it is time to crack open the grill and see what you can come up with.

This Months Secret Ingredient is.....

Fish!!!

The Winner will be chosen by a group of Moderators.

The contest Starts from Today and will run till April 21st

So go forth and cook!!!

Below are the Rules:

One entry are allowed per person.

Cedar Planked Salmon


Ingredients

* 3 (12 inch) untreated cedar planks
* 1/3 cup vegetable oil
* 1 1/2 tablespoons rice vinegar
* 1 teaspoon sesame oil
* 1/3 cup soy sauce
* 1/4 cup chopped green onions
* 1 tablespoon grated fresh ginger root
* 1 teaspoon minced garlic
* 2 (2 pound) salmon fillets, skin removed


Directions

1. Soak the cedar planks for at least 1 hour in warm water. Soak longer if you have time.
2. In a shallow dish, stir together the vegetable oil, rice vinegar, sesame oil, soy sauce, green onions, ginger, and garlic. Place the salmon fillets in the marinade and turn to coat. Cover and marinate for at least 15 minutes, or up to one hour.
3. Preheat an outdoor grill for medium heat. Place the planks on the grate. The boards are ready when they start to smoke and crackle just a little.
4. Place the salmon fillets onto the planks and discard the marinade. Cover, and grill for about 20 minutes. Fish is done when you can flake it with a fork. It will continue to cook after you remove it from the grill.

White catfish filets...

cornmeal...1 cup

flour 1 cup

ritz cracker crumbs 1 cup

canola oil (fill deep fryer to line or specifics directions)


place catfish filets in cornmeal, flour, and ritz cracker crumb mixture

deepfry

sit down

salt to taste

devour!!


you may continue making breading as long as you have fish to fry

Here is mine...

Lemon/ Dill Salmon

1 lbs of Salmon with Skin
2 Lemons
6 sprigs of dill
butter.

take a piece of tin foil and fold the sides up a few times to make tray.
Juice the lemons.
Crush the Sprigs of the Dill and crush them up to open them
toss the dill in the lemon juice.
Put the Lemon Juice and Dill on the Fish and let Marinate.

Put the tray on your grill and put a few pats of butter in it.
Put the fish in the tray along with the rest of the lemon juice and Dill.

Then go ahead and cook it to your desired preference.

stuffed flounder


1 Flounder (large)
1/4 cup of raw shrimp
1/4 cup blue crab meat
1/4 cup chopped celery
3-4 celery stalks
1/4 onion - diced
1 tablespoon garlic powder
Tony Chachere's Creole Seasoning
1 stick of butter
lemon juice
parsley


stuffing
sautee onions and chopped celery in 1/2 stick of butter until onions are translucent
add some creole seasoning, garlic powder, shrimp and crab meat
mix it up and sautee for 2 more minutes


put the celery stalks in the bottom of a baking dish
stuff flounder with the stuffing
put the flounder on top of the celery (makes a raised platform so juice don't make it soggy)
melt the remaining 1/2 stick of butter and pour over the flounder
sprinkle some creole seasoning and parsley on the outside
squirt some lemon juice over it as well


bake at 350 for 30 minutes

PECAN CRUSTED DIJON TILAPIA

4 tilapia filets
1/2 cup mayo (not low fat)
1/4 cup Dijon mustard
1 tsp. butter (or Pam spray)
1/4 cup finely chopped pecans

Spread butter on metal baking pan. Place filets on pan. Combine mayo and Dijon and spread on filets.
Sprinkle with pecans. Bake at 375 for about 10 minutes unless filets are extra large, then add about 2 minutes.

we have that at work and almond crusted too /\


**I forgot to add to the recipe I posted that you can also do an egg/milk dip before dippin into the flour, cornmeal, ritz cracker mixture if you like**


I like it both ways.
