one of my fav stretch the meat meals is a stir fry, you can get away with very little meat that way.
breakfast burritos are great for dinner and use very little meat/eggs use lots of potatoes as filler.
buy a big old bone in ham, bake it for one meal, slice up left over meat and make breakfast burritos, and then use the bone for Ham and beans or potato soup.
