So the midget got me craving chicken and dumplings ... what's your fav recipe?

I don't like dumplings. Maybe I've just never had 'good' ones though. My mom has never made them and my m-i-l's are gross!

This place in Augusta called Wife Saver had the best chicken 'n dumplings. They only served it in the fall/winter, though. I've never made it myself, though.

nice, rolled out dumplings. the gravy/sauce/broth..whatever you wish to call it, your choice..was so thick, not watery soupy, and tasted awesome.


that and a salad and soem tea was a grand dinner

Mom's

Put chicken thighs in a roster, sprinkle with 1 package of dry onion soup mix, cover and bake at 350 for 1 1/4 hours.

Dumplings:
Peel & boil 4 potatoes

drain and mash with 1/4 cup water, 1 egg, 1/2 tsp salt and add enough flour to make a soft dough (1/2 - 1 cup)

Drop 1/2 tablespoon portions of dough into boiling salt water and boil about 8 at a time.

Let boil for a couple of minutes and remove with slotted spoon into a bowl

When chicken is done, remove chicken to casserole dish, add 1 can of cream of mushroom soup to juice in pan and blend together.

Add dumplings to roaster and mix to coat with soup. Cover and return to oven for 15 minutes.

Done.

Make a good chicken stock, I use chicken thighs when i do mine for the chicken later

Bring to boil after straining ... drop in biscuits.

Add the chicken from the pieces you used to make the stock

I also add Mirepoix as mine are cooking (carrots, celery and onion)

Cover and simmer for 15 minutes.... (make sure you seperate them with a spoon half way through and flip em a little making sure they're cooking even.


NOW do you like floaters or sinkers?

If you like the light fluffy floating ones they should be ready now

If you like thicker heavier sinking ones ... cook uncovered for another 15-20 minutes.


I also cheat a lot and use Bisquick biscuit mix, they always turn out perfect


This is part of my signature dinner which also includes fried chicken and real mashed potatoes and a gallon of Sweet Tea

I've made it for tons of people and everyone always loves em


PS - This is the first time I've shared my "recipe" with anyone that isn't family.

I think that's the wknds project. Well assuming the BF gets the kitchen cleaned up (we had a lot of house work done this wk)

I used to love them mom made them in a presto pressure cooker she made great Swiss steak in it too. Yum I might have to buy one now that this has reminded me of the 2 recipe.
