What is the one thing that you can not live without in the kitchen?

Electric Griddle --- pure awesome
pancakes - eggs - bacon - kalbi - fajitas - quesadillas - grilled cheese etc.

My 14" cast iron skillet. I can make just about anything in it from pancakes to fried foods to Boston Butt for pulled pork sandwiches (I don't have a slow cooker I use my cast iron skillet and aluminum foil). It cost me less than $20. It will probably last forever. It's very versatile.

i find that cheap ass mr coffee makers make me a better cup than the expensive cuisinart ones.

I really don't need gadgets. As long as I have a spatula, non-stick frying pan, a pair of tongs and a can opener, I can do anything.

I did forget my one favorite kitchen gadget I now take for granted. While I was on a business trip once, my husband installed an instant hot water (190 degrees) faucet on my sink. I use it all the time. My husband rocks
